Cooley est la dernière née des distilleries irlandaises et en même temps la seule distillerie indépendante de l'île. Elle a été recréée en 1987 par un Irlandais John Teeling. La distillerie est localisée sur la péninsule de Cooley, dans le Comté de Louth sur la côte orientale de l'Irlande.
Cooley se distingue des deux autres distilleries irlandaises en pratiquant un double distillation alors que la triple distillation est la marque de fabrique des whiskeys irlandais de Bushmills et Midleton.
La distillation a lieu à Cooley mais les chais de maturation se trouvent dans l'ancienne distillerie de Lockes à Kilbeggan comté de Westmeath au sud de Mullingar et 11km de Tullamore comté Offaly.
