Les edamame (枝豆) sont une préparation de fèves immatures de soja (variété de couleur verte), d'origine japonaise, qui se consomment aussi à Hawaii et en Corée. Ce plat est souvent servi dans les restaurants japonais en guise d'apéritif en accompagnement avec de la bière.

Étymologie

Le nom japonais edamame (枝豆?) se traduit littéralement par haricot branche. Le mot japonais eda (枝) voulant dire "branche" et mame (豆) signifiant "haricot". Cette expression fait référence au soja cultivé avec ses jeunes rameaux.

Histoire

La plus ancienne référence concernant les edamame date de l'année 1275, quand le célèbre moine Nichiren a écrit une note pour remercier un paroissien pour le don d' edamame qu'il avait offert à son temple.

Préparation

Les gousses de soja vert sont cueillies avant leur maturité. Les edamame sont cuits dans l'eau bouillante ou à la vapeur.

On rajoute toujours du sel sur les edamame. Soit il est ajouté dans l'eau bouillante avant d'y introduire les gousses de soja vert, soit il est ajouté après cuisson. Les edamame sont généralement servis après refroidissement, mais peuvent aussi être consommés chaud.

La consommation d'edamame doit être évitée pour les personnes allergiques au soja.
