Le combava (ou combawa, cumbava, cumbaba, makrut ou kaffir lime) est un agrume. C'est le nom d'un arbre (Citrus hystrix) et de son fruit. Appartenant à la famille des Rutacées, le combawa est originaire d'Inde. Il a été introduit dans les îles de l'océan Indien à la fin du XIXe siècle.

Description

L'arbre de petite taille possède des feuilles rétrécies au centre et des épines sur les branches.

Les fleurs blanches donnent naissance à de petits fruits ronds ne dépassant pas 5 à 6 cm de diamètre.

L'écorce du fruit à la texture grumeleuse est d'une teinte vert profond. Il est plus petit et plus acide que son proche voisin, le citron.

En région froide, on le greffe généralement sur Poncirus trifoliata.

Utilisation

Le combava est principalement utilisé à la Réunion, à Madagascar et en Asie du Sud-Est (Thaïlande, Cambodge, Viêt Nam, etc.). Son zeste y relève le goût de nombreux plats, comme les rougails de tomates ou les sauces de piment. On utilise le jus pour préparer une boisson désaltérante. Les feuilles sont également utilisées dans la composition de nombreux plats. Au Laos : après la cuisine, le jus du combava est aussi utilisé pour laver les cheveux pour les garder long et brillant.
