Structure chimique de la canavanine

La L-canavanine est un acide aminé, présent dans des plantes (principalement des légumes et leurs semences). Sa structure chimique est assez complexe et définie comme suit :

H2N-C(=NH)-NH-O-CH2-CH2-CH2-CH(NH2)COOH

Spécifiquement, la L-canavanine est un antimétabolite de la L-arginine. On en trouve dans les plantes du genre Sutherlandia à des taux dépassant de justesse 2,0 mg par gramme de feuille séchée. Elle protège la plante de divers insectes prédateurs.
