Un sofer (Héb. סופר) est, au sens traditionnel du terme, un scribe, c'est-à-dire un expert en calligraphie hébraïque, suivant des règles d'écriture traditionnelle précises, tant par rapport à la forme des lettres qu'aux outils d'écriture. En hébreu moderne, on le dénomme Sofer sta"m (סופר סת"ם), afin de le différencier de l'écrivain, également appelé sofer. Sta"m est un acronyme de Sifrei (Torah), tefillin ou Mezouzot, car ces documents, porteurs de sainteté doivent nécessairement être écrits par un sofer dans les règles de l'art afin d'être valides. Les soferim sont également requis pour rédiger des contrats de mariage (bien que pour ces derniers, ils ne sont pas du tout obligatoire.) ou de divorce.
