Jambalaya, ou Jumbalaya, est un mot très utilisé en musique et en cuisine. En cuisine, il recouvre une multitude de recettes de viandes à base de riz, toutes très épicées, telles que le « riz créole Jumbalaya » avec du jambon et des saucisses, des gambas ou des huîtres, ou le « Me-o-My-O Jumbalaya » avec du bœuf.

Origine

Ce serait un mot d’origine séminole repris par les cadiens et signifiant « fête ». Il pourrait aussi venir du créole des esclaves de Louisiane "jambon à la ya", où "ya" signifie riz, comme en Afrique de l'Ouest. On peut enfin le rapprocher de l'occitan "jambalaia" qui désigne un ragoût de volaille et, au figuré, un méli-mélo[1].
