Les falafels (arabe : فلافل, hébreu : פלאפל) sont une spécialité culinaire très répandue au Proche-Orient constituée de boulettes de pois chiches ou de fèves frites dans l'huile.

Cette spécialité trouve son origine en Egypte, pendant la première moitié du premier millénaire de notre ère. Les falafels ont ensuite conquis des régions correspondant aujourd'hui à la Syrie et au Liban pour être aujourd'hui consommés dans tout le Proche-Orient.

La variante égyptienne utilise exclusivement des fèves, tandis que d'autres variantes peuvent utiliser uniquement des pois chiches. Selon les recettes, les pois chiches sont cuits ou justes trempés avant la confection. Ils sont traditionnellement accompagnés d'une sauce au yaourt, ou tahini dans la cuisine libanaise et israélienne. Ils sont servis en mezzé ou en sandwich dans du pain de type pita et ses variantes du Proche-Orient.

Les falafels sont très populaires notamment au Liban, en Syrie, en Égypte, où ils sont appelés tamiya, en Turquie, en Jordanie et en Israël, où ils ne sont généralement pas servis sur une assiette mais en sandwich, dans un pain de type pita, accompagnés de crudités et éventuellement de houmous ou de téhina.

Origine possible

L'origine de ce mets proviendrait d'Egypte. Le mot falafel aurait la signification de emballé qui vient du mot mlaff, en raison du fait qu'on le mange souvent en sandwich. Il serait aussi possible que cela vienne du mot piment qui vient du mot arabe: flayfle.
